blueberry passionfruit cheesecake squares

Ingredients
250 gram plain sweet biscuits
100 gram butter, melted
500 gram cream cheese, softened

165g caster sugar
2 teaspoon finely grated lime rind
2 eggs

120g sour cream
2 tablespoon lime juice
150g frozen blueberries

60ml passionfruit pulp
 

Method
  1. Preheat oven to 150°C
  2. Grease 20cm x 30cm rectangular pan; line base and long sides with baking paper, extending paper 5cm over sides.
  3. Process biscuits until fine. 
  4. Add butter; process until combined. 
  5. Press mixture over base of pan
  6. Refrigerate 30 minutes.
  7. Beat cream cheese, sugar and rind in medium bowl with electric mixer until smooth. 
  8. Beat in eggs, one at a time, then sour cream and juice.
  9. Pour mixture into pan; sprinkle with blueberries, drizzle with passionfruit pulp. 
  10. Bake about 35 minutes or until set. 
  11. Cool in oven with door ajar. 
  12. Refrigerate 3 hours or overnight before cutting into squares.
