Ingredients
300g self-raising flour
150g brown sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 egg

185ml milk
80ml vegetable oil
2 bananas, mashed
150g frozen blueberries
Dietary substitutions
- Butter ... margarine or Nutlex
- Flour ... gluten free self-raising flour PLUS another 1 teaspoon baking powder
- Egg ... Add either another 2 mashed bananas OR 150g pureed apple
- Milk ... Use soy or rice milk
Method
- Preheat oven to 180°C.
- Line a 12-hole muffin pan with paper cases.
- Combine the flour, sugar and cinnamon in a large bowl.
- Whisk egg, milk, oil and banana in a medium bowl.
- Add wet mixture to the flour mixture with the blueberries and stir until just combined.
- Divide the blueberry mixture among the paper cases.
- Bake for 20-25 minutes or until a skewer inserted in the centres comes out clean.
- Transfer muffins to a wire rack to cool slightly.
