blueberry banana muffins

Ingredients
300g self-raising flour 
150g brown sugar 
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 egg
185ml milk
80ml vegetable oil
2 bananas, mashed
150g frozen blueberries

Dietary substitutions
  • Butter ... margarine or Nutlex
  • Flour ... gluten free self-raising flour PLUS another 1 teaspoon baking powder
  • Egg ... Add either another 2 mashed bananas OR 150g pureed apple
  • Milk ... Use soy or rice milk
Method
  1. Preheat oven to 180°C. 
  2. Line a 12-hole muffin pan with paper cases.
  3. Combine the flour, sugar and cinnamon in a large bowl.
  4. Whisk egg, milk, oil and banana in a medium bowl. 
  5. Add wet mixture to the flour mixture with the blueberries and stir until just combined.
  6. Divide the blueberry mixture among the paper cases. 
  7. Bake for 20-25 minutes or until a skewer inserted in the centres comes out clean. 
  8. Transfer muffins to a wire rack to cool slightly.
