sticky chicken drumsticks

Ingredients 
60ml Hoisin Sauce
2 tablespoons Soy Sauce
2 tablespoons Honey
3 garlic cloves, finely chopped
1 tablespoon peeled ginger, finely chopped
1.2kg chicken drumsticks OR diced chicken

Dietary substitutions
  • Hoisin and Soy sauce ... Both are SOY based. A good recipe substitute is to stir together 1 cup barbecue sauce (gluten free if needed), 3 tablespoons molasses, 1 teaspoon vegetarian beef stock, 2 teaspoons balsamic vinegar, 4 teaspoons yeast extract, and 2 1/2 teaspoons Chinese five-spice powder, 1 pinch each of white pepper, garlic powder and ground ginger.  Then measure 80ml to replace both together.
Method
  1. Preheat oven to 220°C. 
  2. Line a large heavy rimmed baking tray with foil.
  3. In a bowl, whisk together hoisin sauce, soy sauce, honey, garlic and ginger. (Keep 60ml of this sauce mix for serving). 
  4. Coat the chicken in all the remaining sauce.
  5. Place the chicken on the prepared tray.
  6. Bake, turning occasionally, for 25-35mins or until chicken is caramelised and cooked through.
  7. Brush the saved sauce mixture over the cooked chicken. 
  8. Serve with rice and vegetables or salad.
