2 tablespoons Honey
3 garlic cloves, finely chopped
1 tablespoon peeled ginger, finely chopped

Dietary substitutions
- Hoisin and Soy sauce ... Both are SOY based. A good recipe substitute is to stir together 1 cup barbecue sauce (gluten free if needed), 3 tablespoons molasses, 1 teaspoon vegetarian beef stock, 2 teaspoons balsamic vinegar, 4 teaspoons yeast extract, and 2 1/2 teaspoons Chinese five-spice powder, 1 pinch each of white pepper, garlic powder and ground ginger. Then measure 80ml to replace both together.
Method
- Preheat oven to 220°C.
- Line a large heavy rimmed baking tray with foil.
- In a bowl, whisk together hoisin sauce, soy sauce, honey, garlic and ginger. (Keep 60ml of this sauce mix for serving).
- Coat the chicken in all the remaining sauce.
- Place the chicken on the prepared tray.
- Bake, turning occasionally, for 25-35mins or until chicken is caramelised and cooked through.
- Brush the saved sauce mixture over the cooked chicken.
- Serve with rice and vegetables or salad.
