beef and garlic sausage pasta bake


serves 4-6
Ingredients
250g spiral pasta
2 teaspoons olive oil
500g beef sausages  (or other meat types)
50g minced garlic 
1 bunch flat leaf parsley
1 brown onion, coarsely chopped
2 zucchini, coarsely chopped
2 carrots, coarsely chopped
1 medium pumpkin, skin removed and coarsely chopped
1 bunch asparagus, trimmed, cut into thirds diagonally
800g jar pasta sauce or crushed tomatoes
80g frozen baby peas
1/4 cup chopped basil
100g grated pizza cheese
Basil leaves, to serve
Method
  1. Cook the pasta in a medium saucepan of boiling water following packet directions or until al-dente. Drain.
  2. Meanwhile, heat oil in a large saucepan over medium heat. 
  3. Add the sausages and cook, turning, for 6 mins or until cooked through. Transfer to a plate. 
  4. Cut into 1.5cm slices diagonally. Add the onion and zucchini, pumpkin and carrots to the pan and cook until lightly browned. 
  5. Add the asparagus, pasta sauce and peas. 
  6. Cook for 2 mins or until sauce reduces slightly.
  7. Stir the sausage, pasta and basil into the vegetable mixture. Season.
  8. Preheat grill on high. Transfer the pasta mixture to an 8-cup (2L) baking dish. Sprinkle with cheese. Cook under grill for 3 mins until cheese is golden and bubbling. Sprinkle with extra basil and serve with salad.
