Ingredients
250g spiral pasta
2 teaspoons olive oil
1 brown onion, coarsely chopped
1 medium pumpkin, skin removed and coarsely chopped
1 bunch asparagus, trimmed, cut into thirds diagonally
800g jar pasta sauce or crushed tomatoes
80g frozen baby peas
1/4 cup chopped basil
100g grated pizza cheese
Basil leaves, to serve
Method
- Cook the pasta in a medium saucepan of boiling water following packet directions or until al-dente. Drain.
- Meanwhile, heat oil in a large saucepan over medium heat.
- Add the sausages and cook, turning, for 6 mins or until cooked through. Transfer to a plate.
- Cut into 1.5cm slices diagonally. Add the onion and zucchini, pumpkin and carrots to the pan and cook until lightly browned.
- Add the asparagus, pasta sauce and peas.
- Cook for 2 mins or until sauce reduces slightly.
- Stir the sausage, pasta and basil into the vegetable mixture. Season.
- Preheat grill on high. Transfer the pasta mixture to an 8-cup (2L) baking dish. Sprinkle with cheese. Cook under grill for 3 mins until cheese is golden and bubbling. Sprinkle with extra basil and serve with salad.
