Ingredients
Oil
3-8 tablespoons Tikka Masala paste (depends on flavour preference)500g diced chicken breasts
410g canned crushed tomatoes
150g potatoes, cleaned and diced
150g pumpkin, peeled and diced
1250g sweet potato, peeled and diced
1 tablespoon chicken stock
ground black pepper, to taste
2 tablespoons plain yoghurt, to serve
Mint leaves, to garnish
Steamed rice, to serve
Method
- Cook potatoes, pumpkin and sweet potato in boling water until tender.
- Heat oil in pan, add Tikka Masala pastes and chicken and cook until lightly browned. Simmer for 2 minutes.
- Add stock and pepper to taste
- Continue cooking for 6 minutes or until the chicken is cooked through.
- Spoon over yoghurt, scatter over mint leaves and serve with steamed rice, naan or paratha.
