Ingredients
1 tablespoon olive oil
1 large onion, finely chopped
2-4 teaspoons crushed garlic
2-4 teaspoons crushed garlic
500g beef, lamb or chicken mince
300g can kidney beans, drained, rinsed
1 teaspoon chilli powder
2 tablespoons tomato paste
800g can crushed tomatoes
800g can crushed tomatoes
1/4 cup water
1/2 cup coriander leaves, chopped
1-2 packets of soft tortilla boats
1-2 packets of soft tortilla boats
1 cup grated cheddar cheese
tomato salsa
guacamole, to serve

Sour cream, to serve
Fresh coriander, to serve
Method
- Heat oil in a non-stick frying pan over medium heat. Cook onion and garlic for 2 minutes, or until soft. Add mince. Cook, stirring with a wooden spoon, for 5 minutes or until browned.
- Add kidney beans, chilli powder, tomatoes, tomato paste and water. Reduce heat to medium-low. Simmer for 5 minutes, or until thick.
- Stir through coriander.
- Scoop mince into tortilla boats.
- Sprinkle with cheese. Add small scoops of guacamole, sour cream and salsa.
- Serve with garden salad
