toasted cheese, basil and tomato sandwhiches

serves 6-12
Ingredients

2 garlic cloves
1/4 teaspoon sea salt flakes
1 cup packed (about 20g) fresh basil leaves
1/4 cup (20g) freshly grated Parmesan
1/3 cup (80ml) extra virgin olive oil
6 soft rolls
6 tasty cheese slices
125g double-cream brie cut into 6mm-thick slices
2 ripe tomatoes, thinly sliced
2 teaspoons balsamic vinegar
sliced meat as needed
Method
  1. In a food processor, pulse garlic, basil and parmesan and pulse 10 times. 
  2. With the machine running, gradually pour in oil. 
  3. Season with salt and pepper. 
  4. Cover and set aside.
  5. Preheat oven to 180°C
  6. Cut loaves horizontally in half
    Spread basil mixture over each half. 
  7. Top bottom half with sliced tasty cheese, then brie.
  8. Place bread halves on oven tray and cook in oven until melted.
  9. Arrange a single layer of tomato over bottom half of bread. And a single layer of meat on top half.  Sprinkle with salt and pepper and 1 teaspoon of the vinegar. 
  10. Cover with top half of bread and press gently. 
  11. Using a serrated knife, cut into 4 pieces and serve immediately.
